In 2005, Holly and husband, Chris Monnette, purchased the Caffé Pacori brand of coffees, and decided to run the business as partners. Shortly after their joint venture began, Chris was offered a job he couldn’t turn down, and Holly chose to manage the coffee business on her own. Since taking the reins at Caffé Pacori,  Holly has successfully raised revenues, cut expenses and launched initiatives like customized private labels and specialized roasting techniques. With her passion and understanding of coffee, Holly strives to ensure that Caffé Pacori coffee is roasted perfectly.

“Giulio Pacori was my husband’s grandfather and he will always be remembered his love for Italy, especially the Italian Opera, and his passion for sailing and the sea.” Chris’ fondest memories are of him sitting by the radio with his pipe in hand enjoying some famous Italian Aria, or standing tall at the helm of his sailboat completely at peace with his world.
“We know he would approve of us carrying on this tradition of roasting only the finest coffees using recipes and techniques that have been handed down through generations of Italian Roastmasters. We don't do it the easy way, nor is it the cheapest or fastest, but it is the best way. I would like to think that if Giulio were alive today he would still spend his Saturdays listening to Italian opera on the radio, sailing whenever he could and all along enjoying a cup of our deep, dark, and wonderful Bistrio Italiano.
